But (provided you uninstalled Banshee), which one is default? All I did on my machine is to install Clementine, uninstall Banshee, then reboot.
One of reasons might be to test created PDF files, especially if they're intended for press, to make sure everything is OK. For this task, unfortunately, there is no reliable alternative to Adobe...
Apart from setting Clementine default player, did you try the old method: right click on an .mp3 file > Properties > Open With, and set Clementine there?
Another way might be to uninstall Banshee.

Try middle-click on "Home folder" icon (hint: "Ubuntu Desktop Guide", section "Tips & Tricks" > "Middle-click").
