Kubuntu, (if you use kde, try katapult, its awsome, you can even control amarok with it) I havn't experianced any stability issues or anything. I'm not too opposed to Gnome though, but I like KDE...

yeah 7.10 is pretty darn stable. Even 8.04 (which is still in alpha) is stable (less stable than 7.10, more stable than windows vista).
