I think the server kernel has PAE support compiled in. Otherwise I think you will have to compile your own kernel. Wow that is alot of ram. I have 200mb and it does pretty good for me. :O
I think you can install and run the server kernel with a desktop system. Worth a try.

So if your running a 64 bit kernel... you shouldn't have to worry about it.
That's what I figured.
And there are some issues with the server kernels... but if you run everything open source. then it shouldn't be an issue.
