Depends. Used Ubuntu for about about 2 years, then Mint, now Arch. Then the last year and a half, I've been running Ubuntu on my development server but recently I started using Centos instead. The demo VM instances that Wakame-VDC starts while I develop are running Ubuntu though. Yes, I had to make it that complicated.

No, I use one for ergonomic reasons. My laptop is up on a stand so I can look at its screen without hunching over. Got a set of those ergonomic keyboards and mice as well.
