Looked up some stuff a long time ago and was reading about updating Android tablets using a USB connection and flashing the tablet ROM, so not sure how to install Linux on a Android tablet? I wanted to install Ubuntu on my Inspire switch 10 windows 10 tablet but read that it does not work well.
Not just Android tablets, I would love to put Linux on my old 16GB iPad 1st Gen. It's 10 years old and still going strong, I use it for playing videos and music, and I surf the web on it, but it's limited on what sites I can visit due to the outdated browsers I have installed, so i'd love to install a lightweight distro on it.

The page also has a link to their howto port devices, if you're device isn't supported and are willing to try helping to port it.
(I would only do it (try their porting new device method that is) with a device I consider a brick already; That way the only way to go is up.
If it fails, well it was a brick to begin with anyway.)

I think my RCA tablet is going to become a disposable device it doesn't appear to be supported by the installer either and what's in the list kinda seems like not everything works if it does install.
Guess the only way to find out and know is just to go for it and give it a try and see what happens. (scratches head)

Are there any available tablets that work 100% with Ubuntu Linux, 686 or ARM based? Should work well enough to use for web browsing when I go on a trip. Or even possibly a two in one 14" laptop with touch screen.

I currently have a Dell tablet with a 12 inch screen. I could see a 10 inch screen being a plus for easier handling in the field. I'm glad I didn't go with a bigger screen.

I got one of the bq aquaris ubuntu tablets, that was about 6 years ago… bummer they dropped support for that project a couple of months later and stopped entirely working on convergence including ubuntu phone. That made me reluctant backing up any such projects.
Nowadays there are a couple of new projects popping up again but am wondering the level of app support. My main beef was that ubuntu touch worked quite well but apps like gimp, inkscape or libre office were not useable, there was no touch screen/tablet equivalent.
