Because your system is remarkably sensitive to some recent changes in the kernel.
New kernels are tested before they are released and are only released when they appear to work. But they aren't tested on every computer imaginable. Without knowing what goes wrong and some details on your hardware this is impossible to answer.

I talking about the latest 5.4 LTS Kernels in the Ubuntu Kernel Archive. Why do they keep breaking as a new one is released?
Those are strictly testing kernels and not anything Ubuntu Releases, officially.
Nothing from Ubuntu kernel mainline is ever to be considered stable.

The "Latest LTS Ubuntu Kernels" are the ones in the standard repositories, and you are going some way "off-piste" into relatively uncharted territory by installing the versions you have been using from the Mainline Test area; the use of the word "Test" might raise your suspicions, I believe.
