Spilled the Beans
The other day I was messing around with my app icons, because I wanted the GNOME Software icon to be changed. When I was looking for the correct .desktop file to change, the closest one I could find was gnome-software-local-file.desktop. So I changed that, but the GNOME Software lost it's icon! In an attempt to fix the problem I reinstalled GNOME Software. Although this regenerated the gnome-software-local-file file, the icon was still gone! What can I do?

You could use the app alacarte to add an icon to it.
