First regarding the ability to edit the Main Menus via the menu itself:

Which "first screenshot"? The one in my OP or the one in that last post?

Are you already running a flashback session?

Edit: Just happened to think - if you click on a screenshot to expand it, then just click on it again and it will open in a new browser window. So just post the URL of that window and I'll know which screenshot you mean.

It's in dconf-editor > org/gnome/metacity but there's almost nothing left:

I an not on gnome at the moment so I cannot verify, but I wonder if gconf-editor has any usable settings.

As my OP says:

...... metacity settings have now been totally deprecated from gconf in favor of dconf/gsettings .......

I tracked that here and here.

Yep, figured as much. Been several months since I messed with it as I have my system set up the way I like it. Keep up the good work
