So I took a look in the grub.cfg file and this is what it says,

I noticed that the "drivemap -s", both say "hd0". They aren't on the same drive.
The "Windows NT/2000/XP" entry is the Server 2003 install. Which boots fine.
Notice "set root" = "hd1,msdos1". Should the drivemap not also say, "drivemap -s (hd1) ${root}" on that(Server 2003) install?
Eh..will try it and see what happens.
