I know nothing about the RAID end of it.
But when you get to the partitioning part of install, you want to select "Other" for manual partitioning, which should allow you to use specific existing partitions for specific mount points and whether to format any of them or not. The bottom of that page also allows you to set where to install grub.
But isn't it risky using the same partition as /boot for more than one OS, or are you going to somehow split them into different directories?
