Apparently it's because people usually use Nautilus with the "breadcrumbs" view, and when you've got the breadcrumbs showing you don't need a "Go Up" button.
I usually use the "location" view instead of the breadcrumbs, but it only took a few days to get used to not having a Go Up button. Usually Go Back and Go Up are the same thing anyway, when you think about it.
I try to treat the cause, not the symptom. I avoid the terminal in instructions, unless it's easier or necessary. My instructions will work within the Ubuntu system, instead of breaking or subverting it. Those are the three guarantees to the helpee.
