FWIW, I also tried the new gnome 3 by installing gnome-shell. It gets my VNC daemon (vino-server) back, but my clients all have problems with its Activities menu (clicking on the UI don't do anything most of the time). Probably some 3D trick that my VNC clients aren't able to handle yet.
Gnome-classic will do for me for now.
Almost, almost went back to Windows 7. Ubuntu, consider this your fair warning.

I'm not happy with Unity in it's current state either, and it broke both VNC and Network shares for me. I'm expecting this to be worked out over the next 30-60 days but if not, I too will make the fallback session my default on all systems.
Maybe a fix will be out soon... I didn't have this trouble with the beta versions.
