How can i install microsoft or mint's fonts?

sudo apt-get install ttf-mscorefonts-installer
Should get you the MS fonts...
As for mint's, no idea... Try to browse their packages and download the .deb files

Generally you shouldn't, unless there is a packaging conflict.
You can install the MS Fonts no problem while keeping the Ubuntu ones (I usually do), and uninstalling the defaults fonts is really not recommended as it may cause weird behavior.
