When you log in, click on your username and you should see some options at the bottom of the screen. If you click on the little arrow next to the middle one (I think it is) you should get the option of what to boot into.

It may be a silly question but did you install the desktop version or the netbook remix?

11.04 installs both. I found it. It's in the system settings.
Found it:
System Settings --> Desktop --> Workspace Behavior --> Workspace --> Workspace type: Desktop

The really should put that on the login screen though, it's kind of hard to find for a beginner.

Personally, the netbook style looks slick and I like the way it functions, not sure I will use it on my main machine though. lol I add the Application Launcher Menu widget though... lost without it.
