save evry trame(manipulate in the server

i look for a script or something that record every trame in the server and save in a file
like what tcpdump do in this line
but in peridiq time
(manipulate flux of date and saved in the server )

I now the famours WireShark does that but as I know (based on my usage) it's a GUI utility and I know no CLI equivalent that you can run as a service on a server.
