You could try x-sane. It lets you convert the scan to pdf automatically. Here's a link for more information:

xsane works great actually. It even predicts the size of the file. Overall much better than the soft that came with my Canon.

the default scanner utility can also do it!

Try installing gscan2pdf from synaptic - I find it ideal.
I usually just open the file, whatever it is, with Open Office Writer, edit it to my liking and then Export as PDF from the OO file menu.
I need to scan multiple pages from the automatic document feeder and save them into pdf document. Default Simple Scan does not do that. Open office does not do that either.
