I believe for security and usability reasons you do not get the option of hiding filename extensions. They have little use on Linux, and are notorious on Windows.
On Windows, trojans tend to call themselves things like "MILEY CYRUS NUDE!!!.jpg.exe", and Windows hides the ".exe" extension and so the victims think that they're opening a simple picture file. Hence the security concern.
The only extension that the Gnome desktop hides is ".desktop", but it only hides it for files that have been explicitly approved by the user or created by Gnome itself.
I try to treat the cause, not the symptom. I avoid the terminal in instructions, unless it's easier or necessary. My instructions will work within the Ubuntu system, instead of breaking or subverting it. Those are the three guarantees to the helpee.
