I really wish I knew to the answer to this, I really do. It could happen to anyone. You could always create launchers for your apps? Maybe you could find a way to create a launcher for the add panels screen. *Awaits expert.
Deleting your config files should do the trick (/there are lots of threads on this, use search)

That happened to me a few times. The same issue in KDE and Gnome.
Deleting panels (the default) should not be an option.
Try using this command in terminal:
This will shutdown curently running gconf editing daemon (gconfd service) temperorly for the user.
This will get rid of your current panel for your username only from your homeCode:gconftool-2 --shutdown
This will kill(stop) all currently running panels for your user accountCode:rm -rf ~/.gconf/apps/panel
Logout and log back in again.Code:pkill gnome-panel
Once you log back in again, panels will be recreated and restored to default settings.

to restore the default panels, run:
