    Touchscreen GUI on my laptop

I have started a project and need some input. First the project; I took an old Toshiba l25-s119 and took it out of its case. I then bought a Cyclotouch touchscreen panel and placed it on the screen. I would like to build this laptop in a custom case that would look like monitors at the grocery store check out. I would like to give it to my girlfriend for Christmas so she can use it as a recipe computer. Here is what I need help with:

    - Voice recognition
    - Gesture recognition (easystroke)
    - Hand writing recognition (cellwriter)
    - Network it to my desktop for wifi video playback
    - Finger friendly GUI
    - Recipe program
    - Network printer support
    - Iphone support (not really all that important if I dont have this)

I was hoping people could give me some input as to what programs they recommend. Most importantly the GUI. I really like hildon but I have read of a lot people having problems with getting this to work. Thanks.

P.S. I have seen a lot of people trying to do similar projects so I will do my best to document my progress for the betterment of all.

Bumping an old thread, but I'm curious. Did you get this project to work? I'm in the process of making something similar and are now looking for suitable software.
