neverwinter nights 1 - 2 , also you can play the elder scrolls oblivion via wine.
If you like to go old skool
play Baldurs Gate:Shadows of Amn and Baldurs Gate:Throne of Baal.
If you want to play more modern 3d games play Neverwinter Nights 1/2 and Oblivion series. You also might like the Final Fantasy games even though those are less rpg like. Knights of the Old Republic and Mass Effect are extremely good and you might lose a few nights of sleep playing those games.
Educate men without faith and you make them clever devils
Educate men without Linux, then yeah, the opposite happens
Let Chakra guide the way
U.3F
A small list of fantastic RPGs I've played for PC. =]
Baldurs Gate
Icewind Dale
Neverwinter Nights
Diablo
Diablo II
Sacred
Sacred 2
Morrowind
Oblivion
Fable
Knight of the Old Republic
Mass Effect
You may also want to consider MMORPGs like:
Everquest
World of Warcraft
Warhammer Online

if you're 1337, nethack
MMO wise try the trials for WoW and guild wars maybe?
as mentioned before knights of the old republic is amazing if you like star wars
and even though you cant pick how your character behaves and such...diablo...the dungeon-diving madness is ALWAYS worth the 30 bucks for the game + expansion (grab a battle chest from gamestop)

Final Fantasy.
Nothing on the ps3 yet, if you have a ps2 go for Final Fantasy X (not X-2).
Final Fantasy is the best rpg series, FFXIII is coming to the ps3 (and xbox?) later this year.

KOTOR 1 and 2 are awesome games. 1 if you dont mind partially outdated graphics (IMO they still look good) I love eye-candy but if i a game has a great quality of gameplay i look far past it. (I still play FF9 =)
Morrowind and Oblivion are excellent. Oblivion is a good 20-40 hours of gameplay for the main quest alone depending on how quickly you progress.
If you are looking for a game to get your monies worth. Morrowind can be played for 3 years straight and you'll never complete more than 80% of it (my friends can attest to that) hehe. And the mods for each them are extensive.
