I was wondering how I could setup a virtual Lamp server?
Do I just need to use virtualbox?
or a can I setup multiple servers with one install?

Simply you can install sun's virtualbox or VMware and run whatever you want.

If you're going to be using Ubuntu in each of your virtual machines, I'd recommend using the JeOS version of ubuntu server. It uses less space and is tuned for virtual envoirnments.
