This has been asked before (http://ubuntuforums.org/showthread.php?t=1027477), but I was explicitly told to start a new thread by a moderator, so um, yeah.

Open a terminal, type:
audacity
When it crashes, check the terminal and post back the error it's throwing.

Interesting that Audacity is so horrible for you. I hope it's not reflective of something wrong with your system.
If you don't mind my saying so, your original post opened the door to people wanting to help you fix any issues you have with Audacity.
If you just wanted a list of alternatives, the part about "Audacity crashes all the time. It's super-irritating." would appear unnecessary.
ffmpeg will do all that
Not from the Ubuntu repos but seems to work fine for me on 11.10...

ok DouglasAWh let us be honest about this
there is no real alternative to Audacity
it does editing sound files easier than anyone else
so i would suggest fixing it on your system
most of the time it works as it is meant to so if you have bits and pieces missing maybe go that route
sox and ffmpeg from commandline might/will do all it does i guess but huge learning curve && will always be clumsier
so i back Bucky Ball's suggestion
show the guys what is missing and mayhaps get it fixed
Audacity is like a main organ for sound.... cant really live without it
Linux is Latin for off-the-beaten-track
what I like MOST about our Ubuntu ... The Community ie 50 brains are better than one
Playing with Slackware too now ...
