UPDATE:
Hitting F6 at the LiveCD menu, taking out the "-- " and adding "acpi=off" allowed it to boot and pick up the correct resolution. I'm going to try to reinstall it later today. I think the problem was that booting the LiveCD in safe graphics mode caused it to install it so that the default mode was safe graphics mode, so it only used default resolutions, etc.
