Yes, that´s achievable but always is recommended to backup your data. You need to boot from the live cd or usb and use gparted to extend the partition to your needs.

You are login as guest and that is why the folders are deleted. To login as user you need the password.

I try the XFCE desktop which is just a click away in the software center and is very nice and reponsive.
In my case when I select HDMI the sound would be in the second monitor only. Sometimes a restart is needed.
I use HDMI but perhaps you can go to sound preference in the top panel and select the exit tap, then select the corresponding option.
