Decided to go ahead and wipe my previous 18.10 install and load with 18.04 LTS instead.
Got everything back to as they were when I was still on 18.10 but...
Quick update after a full day of usage yesterday...seems like the WiFi functionality has stabilized!
Rebooted the Macbook Pro several times and the WiFi was holding steady after all the reboots...
Another update with less than 20 min to go before its the New Year, woot woot!
Did another round of playing around and FINALLY got it! Well...I hope so at least, the WiFi has finally been holding...
