I'm using Ubuntu Focal as well. I have both Panel & Dock set to full transparency and love the look. The Gnome Tweaks works wonders.

I've never seen an m.2 that wasn't nvme. I'll have to find one. I do know mine plainly states on the box nvme. I mistakenly thought they all were.

The kernels shouldn't have anything to do with file copying, unless of course an updated driver is included.
I didn't solve it, just use Windows for NTFS file copying, and Linux for everything else.
@filud, I've had same issue. Not only that, but whereas Linux, not just Ubuntu, the mouse is jerky at best when copying or moving files. Windows never slows down mouse movement.
