    You have a BIOS boot loader for Windows in nvme0n1. Just never try to boot in BIOS mode & that will not be used.
    You only want UEFI boot.

    You show two ESP which is ok.
    One on nvme0n1 on p1...

    If very old BIOS, Ubuntu may be too much and you need a lighter weight flavor?
    If newer UEFI (since 2012) you need to update UEFI and change settings in UEFI....

    The update to UEFI often resets all UEFI settings to defaults.
    So they may need redoing.

    Dell typically needs UEFI update, if SSD also SSD firmware update.
    It needs UEFI setting for drives...

    Did it boot, before?
    You show you have ext4 partition, so must have changed UEFI from RST/RAID to AHCI.
    But then did Windows do an update to UEFI and change UEFI settings? I might review those...
