    Disabling the nvidia controller (by disabling the pci entry in hda_intel.c) made the noise disappear, but I have had no luck getting any signal from the microphone either.

    Yep, the output is in degC * 1000 (hwmon standard).

    Ok, so the 2012 models seem to belong to the (small) set of machines where using macfanctld (or similar) is recommended for now.
