I get the same error as you in the nvidia settings gui but I have been able to temporarily get the resolution up to 1152x864 (but I need 1280x1024).

To anyone still having trouble, try System->Preferences->Keyboard Shortcuts and disabling (by hitting backspace) any keys that might already have GNOME preset.

The "fix" appeared to be in having nVidia Settings and compiz on the same page - Sync to VBlank in one of them didn't work but having it enabled in both does work....

I used nvidia-settings to have a look and Sync to Vblank was already turned no. I then turned off compiz and the slicing has gone away which is quite upsetting as I enjoy...
