just to add...how about looking into howtoforge.net. There are a good lot of tutorials which will guide you on your setup.
it all depends on what you really wanted to learn like mails/collab server, or maybe joomla! or other cms. Perhaps try the GLPI with OCS Inventory..just tried earlier this week. :)
I second SeijiSensei, use fetchmail or getmail depending on what will work for you or where you are comfortable with. I used getmail before just because the system I was using isn't compatible with...

hi..not sure on 11.10 but used PUEL version on 10.04 (+1 zeroseven0183). By default, the 10.04 repo uses the OSE. Try installing the PUEL version which is free for personal and/or evaluation.

Why not use google? Lots of stuff when you search for the term free ubuntu ebook.
