    Check Synaptic. It maintains a history of all the packages that get updated. You can select those packages and revert to older versions, then lock them.

    Look for a logout option. It should have a way to shut down.

    In 9.04, when I removed Shutdown from the panel, it appeared in one of the menus. I'm not sure if 10.04 does the same.
