    Beat me to it. The CLI is usually better and gives useful output as to WHY it didn't install whereas the GUI offering may as well just give a picture of Elmo shrugging

    F12 is usually the bottom to press on Dell systems to bring up the one time boot menu. If this is to ONLY have Ubuntu on then I recommend disabling UEFI/Secureboot and so on.

    Windows cannot natively access Ext4 because.....it can't access very many file systems at all. You can install 3rd party tools to read Ext4 but on it's own Windows generally isn't very good.

    The lightest desktop will be not a desktop environment but just use a tiling window manager on its own like Fluxbox, Openbox, FLWM or similar.

    Could use a preseed file to configure systems or have the files accessible on a local file server or available via http on the Web. You can then wget from that when they are out and about.
