Are you sure this isn't a hardware based problem?
I am also curious how icon themes are organized... What Desktop Environment do you have? What icon theme do you have? Does anyone know where the icon themes are stored?
How did you go about changing the icon exactly? Did you change it through a file's properties. (The GUI you get from right-click -> Properties) or did you edit an image file or something?
Is it installed using Wubi by any chance? Are you booting from a USB Flash Drive or a CD? These can slow down Ubuntu performance dramatically.
Did you do anything else besides install Gnome? I had something similar happen to me when I installed a bad nVidia driver.
