    The ubuntu installer will let you select a "side-by-side" installation give Ubuntu like 100GB or however much you want and it will automagically shrink and partition the system for you.

    I'd take out the extra ram you put in. It's could be a bad stick of ram or the system simple can't handle the extra power consumption.

    Do you have your system overclocked or anything? It looks really unstable I would try underclocking it a little bit if its not O.Ced Also power supply could be an issue thats knowin to cause spikes...

    When your in system monitor hit view all processes and then hit CPU so the arrow is pointed down that should show you the culprit you could also use the top command from the terminal.

    ext2 /boot 1Gb (excessive I know but there where recent problems with have 100mb)
    ext4 /(root) 20Gb

    It's not necessary to delete the other kernel infact it's best to keep a couple around just in case one breaks compatibility with your system I always keep at minimum 3 kernel versions.

    You should try using WICD it handles wireless far better then gnome-network-manager.

    sudo aptitude install wicd

    it will automagically replace gnome-network-manager.
