Restarted machine. Ubuntu booted perfectly. Upon logging in, I ran update-grub again and it detected Windows and Ubuntu this time around. Ran grub-install to commit the changes.

Shameless bump. I've been able to mount and navigate my Ubuntu install from the live CD, but GRUB doesn't automatically detect the Ubuntu install when I run update-grub.
I guess I didn't "wipe the MBR"; I ran:
rm /boot/*
rm -r /boot/grub
