Same here. Started doing that on Ubuntu 10.04 for me, but as I said Ubuntu Tweak does it for me. I'm sure it's possible to do it via gconf-editor, haven't looked into it yet.
My take on a minimal desktop.

Just take a look at Kubuntu, looks a lot better than 7! And most applications don't need to be installed via terminal, plus they get auto-updated through one manager! Something Microsoft hasn't...
