AbiWord
Gnumeric
Mozilla 1.73 (hey, I'm used to it...) with the usual plugins (Flash, Java, Acrobat, etc.)
Synaptic/apt (gotta have my upgrades!)
Gnome-CD
gFTP
MahJongg (I'm not a game-player, but I've found this oddly relaxing...)
fortune (helps pass the time during those long downloads...)
Gedit and/or nano (never have been a vi or emacs fan)
Gnome-terminal

Right now, these are my "usual suspects" - I'd like to add more multi-media stuff (i.e. RealPlayer/Mplayer, a DVD player, etc.), but these will do for now.

Multimedia:
Muine (Gstreamer backend)
Sound-juicer
Totem (Gstreamer backend)

Office:
Evolution
OpenOffice (annoying bit is that I have to install the da_DK support seperately)
Tomboy
Planner

Programming:
Mono
MonoDevelop
GTranslator

Net:
Gossip
Epiphany (Since Firefox doesn't obey LANG, and the Danish translation hasn't been run past klid.dk AFAIK, meaning it's all wrong)
XChat (Since there currently isn't a stable GNOME2 IRC client XChat will have to do)

I use...

Rhythmbox - Great music player, although it is a shame about the lengths one has to go to to play MP3s in it under Ubuntu :(, (I would use OGGs, but I need MP3s for my portable MP3 CD player).

Epiphany - Great browser! Integrates into GNOME far better than Firefox (and has a nicer icon! ;)), IMHO should be the default since it does everything 90% of users need and nothing more.

Abiword - Great word processor, much lighter than OpenOffice (which helps when you're on 128MB of RAM) and also integrates into GNOME far better.

Inkscape - Vectors are fun.

The GIMP - Rasters are also fun, great app, shame about the interface.

Terminal - With screen, mutt and emacs.

GAIM - Got to stay in touch. Wish it integrated with GNOME a little better though, and could do with some UI love.

Totem - With the Xine backend, since it is pretty much useless without it. Hope Theora takes off though.

Nautilus - In navagational mode, although I agree that spatial is a good default, I find it a little messy for my layout, and it doesn't really seem as "right" without icons on the desktop.

Bluefish - Excellent web development tool.

That's it, pretty much - I play Neverball a bit too.

Thunderbird: just replaced evolution with this and its faster and nicer to look at IMHO
Firefox: no comment
kate: great for editing source on many remote platforms at once
Lyx: Great Latex frontend particularly lyx-qt
abiword: very fast
staroffice: For the occasional presentation
Jabref: Java frontend for bibtex
xsane: pretty easy to use scanning although getting usb devices to work was a pain
xmms
gkrellm: addicted to this
krusader: great for tranferring files from remote sites- easier than gftp
Fillelight: excellent app for watching disk usage (pretty too!)
freenx: better than tightvnc for remote desktop login
gnome-terminal: probably most used...
synaptic: works much better on Ubuntu than Fedora. Thanks Debian!
cube: great fast 3d game
