I use...

Rhythmbox - Great music player, although it is a shame about the lengths one has to go to to play MP3s in it under Ubuntu :(, (I would use OGGs, but I need MP3s for my portable MP3 CD player).

Epiphany - Great browser! Integrates into GNOME far better than Firefox (and has a nicer icon! ;)), IMHO should be the default since it does everything 90% of users need and nothing more.

Abiword - Great word processor, much lighter than OpenOffice (which helps when you're on 128MB of RAM) and also integrates into GNOME far better.

Inkscape - Vectors are fun.

The GIMP - Rasters are also fun, great app, shame about the interface.

Terminal - With screen, mutt and emacs.

GAIM - Got to stay in touch. Wish it integrated with GNOME a little better though, and could do with some UI love.

Totem - With the Xine backend, since it is pretty much useless without it. Hope Theora takes off though.

Nautilus - In navagational mode, although I agree that spatial is a good default, I find it a little messy for my layout, and it doesn't really seem as "right" without icons on the desktop.

Bluefish - Excellent web development tool.

That's it, pretty much - I play Neverball a bit too.
