Have a look at this (http://www.pendrivelinux.com/2008/10/15/ubuntu-810-persistent-flash-drive-install-from-live-cd/). If you want to use other versions they have pages for them too.

Welcome to Ubuntu.
You really should start a new thread for this otherwise you won't get as many answers by adding to someone elses thread. You could try avant-window-navigator along with awn-manager. You can find this via System-Administration-Synaptic. Just search for avant.
