Ok, so I would like to know your thoughts on which is better and why.

From my understanding, OpenBSD is a fork of NetBSD. How dissimilar are they really?

I always come across the "security vs portability" talk, but surely OpenBSD must be more than secure default installs and NetBSD must be good for something other than working on a toaster?

This is not intended as a distro bash thread, I just want some good, clean opinions.

Cheers.

By all means, feel free to find out for yourself ;)
I'm biased but will say OpenBSD. Why? It won't help you in the least to know. Give it a go!

I love NetBSD, it's one of my favorite operating systems because it's just so clean, minimal, fast, stable, and it's a *BSD of course :p. It's a fantastic OS but lacks certain features *cough*flash*cough* I haven't tried OpenBSD though but you pretty much summed up the difference "security vs portability" :)

I like NetBSD a lot. It's simple, clear, and has an awesome installer.

OpenBSD has its fans, but I'm not one of them.

Check out this comparision, the basics are there:

Personally, I prefer OpenBSD of the two, but still prefer FreeBSD to both, especially for desktop deployment.
