I just installed v5.10 2 days ago. Is there anything I absolutely need to know about (other than stuff like Ubuntu not having a root account)?

You need to know about the guide. (http://www.ubuntuguide.org)
Ok, it's for 5.04 but most of the info there is valid for 5.10

I always recommend the IRC channels. Use them in a bind. You can get help here fast! XchatIRC> UbuntuServers> Ask away! Saved my butt many times. The forums here are super helpful as well. The search function is your friend.

This starter guide is for breezy 5.10: http://help.ubuntu.com/starterguide/C/faqguide-all.html
It is from the Ubuntu documentation project. You will like it :)
Since you have installed ubuntu , hop right over to http://www.ubuntuforums.org/forumdisplay.php?f=100 it contains many good howtos, fro instance for the drivers of your video card.
Reading this may also help: http://www.tuxfiles.org/ , a well written practical introduction.
Ofcourse there is the Wiki: https://wiki.ubuntu.com/
Good luck.

I actually have a bit of experience using Fedora, I tried to recompile my kernel (and got a kernel panic), and maybe later on, I'll do the same for Ubuntu if I feel like getting the source. But I had some advice on how to do it. (OK, so I got the whole thing from Fedora Core for Dummies. At least I got Ubuntu up by myself...)

I care -- welcome! Ubuntu is great; I've only been using it for a short while, but it's exciting to learn new things in it...
