Most the themes Ive seen have too much white space around toolbars icons and buttons, and the icons buttons and toolbars are too big. On the other hand the compact themes go to the other exterme of getting rigd of so much whitespace that things look bad.

What I'd like to find is a theme that the icons toolbars, buttons, etc. are the same size (but not nessesarily the same style) that they are in Mac OSX, and have the same amount of whitespace. Does anyone know of such a theme (or is willing to make one)?

I would also like it if the toolbar font was made smaller on toolbars and bigger on menu is there a way to modify the theme to use different font sizes for toolbar and menubar fonts?

I'm not sure exactly what you mean, but here are a couple of my personal favorites:
Skiki Colors (http://www.gnome-look.org/content/show.php/Shiki-Colors?content=86717)
and
Murrine Dust Colors (http://www.gnome-look.org/content/show.php/MurrineDust+Colors?content=90410)
