the Kernal sits at the center of the OS providing a common interface for all the hardwere on the system, aswell as managing memory and prosesses.
the differnaces between them are thay are compiled for diferent prosessor archetectures, have diffent fetures/optimisations enabled

I suggest trying to compile your own kernel you don't have to use it. It's just a good learning experience and It's fairly easy.
