I'm using KDE 4.1 beta 2. I'm assuming this is commonly done, but I can't seem to find it. I'd like to make the windows "super" button activate kick off, like it might in that other OS.

I was looking for the same thing for a while. Alt+F2 is preset for that.
It behaves just like the Vista windows superkey or Alt+spacebar in OS X.
You can change the key combination by going to system settings, mouse and keyboard, KDE component (there is a drop down menue on the right) and selecting run command interface.

Sorry, alt+F2 is the command line. Alt+F1 pulls up the Application Launcher.
