Changing defult location for programs to install to.

Hello

I was wondering how I would change the default place I install my programs to.

I have 2 HDD 1 is for OS (80GB) the other is for data(320GB)

I want the partitions like this.
HDD 1
Windows XP NTFS 32GB
Ubuntu / EXT3 10GB
Home EXT3 5GB
swap 2GB
(the rest of the free space will be for testing other OS's)

HDD 2
Shared Data 320GB FAT32 ( My Doc's, Program Files, and Hopefully Ubuntu Programs)

How would I be able to do this?

I believe that programs are installed to /usr,I might be wrong tho'.
