Does anyone know where I could get the default icons for Ubuntu as PNG's or SVG's to use?

Here you go

http://archive.ubuntu.com/ubuntu/pool/main/h/human-icon-theme/human-icon-theme_0.28.tar.gz

From a search on packages.ubuntu.com

Why are these showing up with white backgrounds? Some are not, but most are... I am using Photoshop and Illustrator to work with these...

What size are you looking at?

Both most of the 48x48's and the 24x24's have white backgrounds.

For me they're fine...problem with Photoshop/Illustrator perhaps?

Well in Photoshop they show up fine, but not in Illustrator, Perhaps I can just add them to my mockup when I get done with the Illustrator part.

It's definitely an illustrator issue. The alpha transparency is there, but illustrator must not pick up on them right (GIMP picks it up just fine). One thing to do might be to import in Photoshop and copy/paste pixel information into illustrator.

I recommend using scalable if you can, though.
