I'd like to peruse the posts on ubuntuforums.org that haven't been answered yet, and see if I can tackle them, is there a way to do this?

This works... Search --> Advanced Search
Leave everything blank
Choose a forum ("Search in Forums") (ie Absolute Beginner Talk)
Now, set "Find Threads With" to "At Most" 0 replies

And I already agree with you... it should be easier. :)

Oh okay, found it now, youve gotta go to your subforum first such as absolute beginner talk, then go to forums tools. its a lot harder to find now, but its back baby! ;)

You can install firefox's ubuntu forums plugin and you will always have it as an option in the context menu without having to enter in any subforum

In a subforum you can also sort threads by number of replies et voila (you have to click twice though because first click sort them from highest to lowest).
