At the top of the Serval, there is a row of touch-keys to the right of the power button; one for internet, one for email, "Wow video", "Wow audio", and a mute toggle.

"Wow video" and "Wow audio" don't seem to do anything for me, although the others work (nicely) as expected.

Is there somewhere that you can set the behavior of these buttons, or map them to new programs?

This is probably the place to start...

They can definitely be programmed.

Also, what model keyboard does the Serval Performance use?

They have a list of supported keyboard models here:

The Serval uses a Verified By Intel Generioc 105-key (Intl) PC keyboard.

Hey, I can't find the serval's keyboard in the supported keyboard list in KeyTouch, but thats OK because I have a Pangolin. Wondering what keyboard it uses. Thanks.

PS any word on the Mute button's LED functioning?

It uses the same keyboard as the serval. It would probably just be listed as a generic 105 key keyboard.
