So I found out that in the repos of hardy is a really dandy little app, Gnome Colour Chooser allows you to change system colours and font colours. Its a yeaaaaaaaa as I can now change panel font colours quickly and easily.
I also found out that in "Appearance Editor" (found under System>preference>Appearance) that if you click on the font tab and then the detail button, you can change the "pixel per inch" setting. So again quickly and easily you can change and tweak the size and quality of your system fonts.
I know for most this is no biggie but for me this really makes Linux and Ubuntu such a really nice OS.
