What are the advantages/disadvantages to each? Which would you suggest?

8series is faster but they also have troubles booting "Ubuntu amd64" with uspalsh turned on.

I have the 7900GT. Great card.
works out the box for 7.10 even better with Envy

Right now, I'd go for the 8 series. They are going to be greater supported in the next few months and you will be future proofing your system

The 9x series is about to launch in February or March which will have DirectX 10.1 support. Only very few games currenly support DX10 at all and usually only improve the visual quality in a minor way. Since the XBox360 does not support the shader model 4.0 this is also unlikely to change in the near future so I guess it's good to go with the 8 or 9 series since most of the driver development by nVidia will probably focus on their newer cards.
