I've done just about everything there is to do. The only thing i have not done is thin clients because that cost some money and i would need extra computers.

Something in media would be nice....or anything thats fun.

Give some suggestions man.

Crank open OOo and write your experiences of using Ubuntu. Create a book from that or even a blog. Make the book available for download from a free web host!! Just an idea ;)

MythTV is awesome. You'll need a tuner card like a PVR-150 or PVR-500 to really do anything worthwhile, but it will change the way you watch TV forever.

Compiz stuff
-Get the 3d goggles working
-Get the wiimote 3d goggles working

If you can figure it out get the wiimote to recognize gestures you do with your hand

Use a phone and setup something like anyremote. Trying to figure out the best way to get all the controls onto 12 buttons is quite challenging. I still haven gotten round to getting my old amazing setup working, i think i had any function i used on my comptuer working within 3 clicks.
regarding media you could setit up do do all sorts of media stuff

Setting up a wiimote as a remote controll ( more than just a mouse )

setup your home to use reiser4, it could be usefull to store media files

theres so much to do and thats not even suggesting you code anything

see how many different distros you can multi-boot on your HDD. :)
